I picked up some baby chenille 1/2 off to do some baby socks with. They don’t stretch like they do when I’ve just used acrylic yarn. Is that typical? Would it work better with a bootie type pattern then socks?

Precisely. You’ve learned, like the rest of us, that chenille will not stretch at all. If you want to make a baby item, I would make a blanket or jacket or something like that.
Or, use the chenille as a deco yarn… like a fur edging or something, but do it as a stitch over, and not as the knit its self because it will not give, and will frey if rubbed too much!

and it absolutely shreds if you try to Unknit it
I saved one skein by frogging it
but that was knit loosely, with needles more than a whole size bigger
even so you might have to CAREFULLY unknit each stitch

And dont grip tightly.
I tension my yarn by using the middle knuckle on my first finger (just the bump) Even though I dont wrap at all I have still stripped the chenille by tensioning too tightly.
