It’s not an exact science. A lot depends on the yarn itself. I think your best bet is to do a swatch with two and three and see what it looks like. I’d generally say two fingering is close to dk. I don’t even think other countries have yarn they call sport weight.

For a baby blanket … use what ever will make it go fastest… they are often neverending!

Two strands of fingering weight = (tangled mess)*(much swearing and flinging of knitting equipment)
