Is there a website that explains what the different stitch patterns are good for? Or even what yarns work best with which stitch patterns.

haven’t run across a site like that, but vogue’s ‘stitchionary’ has an amazing selection of different knit stitches/patterns… I’m trying to remember if there is a yarn guideline in the prologue…
