So am I working this by slipping the first six stitches over to the right needle, then going in as if to make 1, essentially making a yarn over, and then knitting two together? (And then purling twice into one stitch etc)?

I can’t see the full instruction on the photo but I think you might have misread it.
It’s skip not slip the 6 sitches. Put the right needle between stitch 6 and 7 and wrap the needle like a knit stitch so you can draw it through to the front of the fabric.
I think you then put this up on your left needle but I can not see the text. I believe the skipped stitches are worked after this maneuver has been done.
I’ve never done it myself, just guess from the pattern.
So dumb question, how do I skip the stitches without slipping them? Haha

That looks good! You’re not pulling too tightly and yet the sts are moved nicely toward the center sts of each smock.
You can experiment with pulling the wrap stitch a little tighter if you would like but the way you have it now looks neat. You’ve got it.
