I have almost finished my hat and I just realized that I should have prepared some form of edge for the fold or stitched it to the main hat when I was at the length I wanted the brim to be. Does anyone have suggestions for attaching the fold up brim now? I would like it to be on the outside, can I somehow stitch it there without the stitching showing?

What is the name of your pattern?
You should be able to stitch it to the hat using the cast on edge. You can try doing this from the inside and just “catching” the cast on rather than stitching through it. Keep checking from the outside to make sure the sts aren’t showing.
Thank you for your reply. I am not using a specific pattern. I
measured the head and I am knitting a 2 x 2 rib for the entire
hat. I have noticed a turned in brim method but I would like the
brim to fold on the outside. I will try your suggestion. I’ve also
noticed a hat that had the stitching half way into the brim. I
guess you would pick up a leg of each stitch. The challenge is to
get the rib to fit. I also wonder if just leaving it would be the
best as the wearer could decide where to place the brim. Thank you

Leaving it and letting it be turned up by the wearer is a fine idea. That’s the way so many hats are made and has the convenience of being adjustable.
I came across a technique in the Bane sweater knitting pattern that should work for folding the brim outwards. The technique was actually for folding a neckline inwards with live stitches but I cast mine off before working the technique as it was too fiddly and I kept dropping the live stitches.
Basically, you single crochet through the two layers from the outside. You get a nice chain at the base of the neckline which also gives structural stability. I guess you’d have to be careful with a hat that the tension doesn’t affect the stretch too much. Still, it’s easy to pull out if you need to try a bigger hook.

of the brim. But I do think the person getting this hat will
appreciate the ability to fix the brim as he wishes.
