Rib rows

How do I know when knitting rib it means do 5 rows more as
1st Row K1 P1
2nd Row P1 K1
or it means 10 rows?

Also if done 5 rows and should have done 10 how would you change picking up border stiches?

When a pattern says “5 more rows” it means just that, 5 more rows. It’s not sets of rows or 5 more repeats of the last 2 rows. So if you worked 5 more rows, you’ve done it correctly.
If you’ve worked fewer rows than a pattern instructs, then you would pick up fewer sts along a border. Usually the ratio for stockinette stitch would be to pick up 3sts for every 4 rows.
