OT: Merry Christmas, you guys! Let's have a Christmas cookie recipe exchange! This one's my favorite

PECAN SANDIES

1 cup butter or marg.
1/3 cup granulated sugar
2 tsp. vanilla
2 cups flour
1 cup chopped pecans
1/4 cup powdered sugar

Beat butter for 30 seconds; add sugar and beat ‘til fluffy. Add vanilla and 2 tsp. water; beat well. Stir in flour and pecans. Shape into one inch balls, and place on an ungreased cookie sheet. Bake in 325 degree oven about 20 minutes. Cool completely. Gently shake a few cookies at a time in a bag with powdered sugar.

I’m going to try these tomorrow. I got the recipe from the Skinny Chef.

Potato Chip Cookies
[B]Ingredients[/B] 1 pound reduced fat, trans-fat free margarine, room temperature
1 cup granulated sugar
3 1/4 cups all purpose flour
1/2 teaspoon vanilla
1 1/2 cups crushed low-fat potato chips
1 cup confectioner’s sugar
[B]Directions[/B]

Preheat over to 300º F. Mix margarine and sugar until light and fluffy. Stir in vanilla and flour until completely incorporated. Fold in potato chips.
Drop a teaspoon of the batter onto ungreased cookie sheets. With a fork dipped in flour, flatten the top of each cookie slightly. Bake for 17-18 minutes or until cookies are lightly brown. Allow to cool on a wire rack, then sprinkle with confectioner’s sugar.

For the Pecan Sandies, do you use self-rising flour or all purpose?

All purpose flour.
