Nuts about Squirrels pattern help

I’m making the fiber trends nuts about squirrels for my mom for Christmas, but I’m beginning to think I may have picked something a little too advanced for me. This is my first felting project.

The pattern says:

“Use pin to mark center of cast off edge. With RS facing and beginning at this pin, use color A and 10.5 circular needle to pick up and knit 27 sts between pin and first pin on the cast on edge. Change to color B, pick up and knit 4sts between front pins. Using the separate ball of color A, pick up and knit 27 sts, ending at center of cast off edge. Do not join. Turn.”

I don’t get how you pick up stitches on something you’ve already knitted and knit off them.

Please help before I get so frustrated I quit before I even get started!

I’m a newbie and making my first sweater…I also will have to pick up stitches around the neck. I watched the video here and read the instructions in Stitch 'n Bitch and it looks really easy! So don’t be discouraged!!
