Do you “Unroll” the edge and measure? I’m guessing yes, and that’s what I’ve always done, but I’m making my first sweater and it matters now unlike blankets and scarves and such

Yes, unless a pattern specifies otherwise you will unroll the edge and measure all the way from the beginning of your knitting.
