This hat from LionBrand uses worsted weight (like Caron Simply Soft) and can be made with size 8 straight needles. It’s a very easy pattern - 1 1/2 to 2 inches of ribbing, several inches of stockinette, then decrease to the end and seam it up.
You could check out the Knitty Tychus. It’s a fun hat. The pattern calls for a double strand of acrylic worsted weight yarn, so the Caron should work great.
It says size 9 needle, but that makes a pretty big hat, plus this pattern has TONS of stretch, so if you use the 8’s and it’s a little smaller, it should still stretch to fit just fine. It works up pretty fast too!

I’ve just made two of these Lavender Hats You can see then on my Flickr. They don’t have the top leaves yet. I’m thinking about doing felted leaves. They go really fast on size 8 US needles.

That Lavender hat is SO PRETTY! What a great job and idea. I love it, it’s so different.
Well, I don’t know what size needle (I forgot) but I’m just finishing up this hat at Drops. I really liked the complete simplicity of it, it’s just ribbed right up to the top and then two rows of k2tog. I haven’t finished the top so I don’t how it’s going to turn out, I might even change the top but have a look anyhow. It’s quite nice and different. Stretchy too.
