When you knit roll after roll after roll, is it good to the first knit just to slip off the hook and the last stitch to pearl it off

Depends on what you’re knitting. I was taught to always slip the first stitch, but find that if I’m going to seam that edge, it can leave gaps because you’re basically skipping a row. But if it’s a finished edge on a scarf or something, it can look nice.
I wouldn’t purl the last stitch unless the pattern calls for it.

Don’t make each side look completely different?
The sides will look the same. If you think about it the first stitch in any row is in line with the last stitch from the previous row. So your edges are really just going to be a combination of slips and purls on both sides.
