How to serve this leftover pork roast?

Any keen cooks in here up for a challenge?

I roasted this on Saturday, over a bed of sauerkraut in the oven, covered… and it was good the first meal. Now it’s kinda dry. We had it in sandwiches yesterday, but would love some ideas on serving it hot again, as a leftover dish…chopped? diced in rice with bean sprouts?..spag sauce (on pork? maybe not…)…smothered in canned gravy?

all ideas would be greatly appreciated. There are only two of us here to eat it, and we are not big meat eaters…

Shred it and mix with some BBQ sauce and heat and then serve on buns for a BBQ Pork Bun.

Cubed for Roast Pork Fried Rice or Sweet and Sour Pork.
Sliced in Cuban Sandwiches.

I bought a jar of Biriyani curry sauce (Patak’s label- very yum) and added rice and a few veggies… I know that brussels sprouts aren’t everyone’s favorite, esp not with curry - but I needed the green. Not bad!

Lol, I love brussel sprouts and my mom hates them! Actually, the small brussel sprouts are the best tasting, too. Good idea… the bbq idea would have been good as well… I’d also vote for gravy but canned? eww… I guess I’m too used to just cooking everything myself instead of buying things pre-made?
