Just finished a great cardigan of merino and possum…however, in spite of making a small size the shoulders are way too wide. I do not want to reknit if I can help it. Can I , as in sewing a garment, make a bigger shoulder seam? I am afraid it will be too bulky if I do that…and no way to actually cut out any bulk as it will ravel.

You could try making some pleats along the shoulders. This would tighten it across the shoulders, but still leave the stitches to hang across the body of the sweater.
From the ws, near the shoulder seam, pull loops from 2 stitches that are 3-5 stitches apart and tie them together with a small piece of matching scrap yarn. Push the little created pocket putward towards the right side and take a look from the rs. If you like it, make a few more across the length of the shoulder as needed, and adjust size of pleat as needed.
It’s worth a try.
