This one is super stretchy!
I’ve always liked slip 1, knit or purl 1, psso (pass slipped stitch over the stitch just knit) which looks similar to the knitty video.) I can’t see the difference anyway).
It’s easy to remember: Sl1,K1,psso.

I have also used a bind-off that adds stitches in as you go so you end up binding off more stitches than you cast-on
the JSSBO, as linked above. That does the trick, no problem.
Or do an italian bind off (but that can be too tight on socks, sometimes)
