I want to make a hat like this but knit- anybody know how I would go about that, or have a pattern?

If you skip up to around 20:30 she shows how to do the curlers and attach them. You could do the same on a basic knitted hat. I think garter stitch might work better than stockinette.

How about this pattern for the hat?
The texture looks a bit like crochet, free version or paid for version available.
Then you can sew on the curlers like in the video.
