Converting images to knitting charts

How do you convert an image (picture) into a knitting chart. (My son has requested a christmas jumper featuring a skull father christmas,!!)
Strangely enough I can’t find an adult jumper pattern that already features this)

First, if the yarn is unknown to me, I knit a bit with it to determine the gauge. Once I know how many rows and columns I need for 10cmx10cm I open up a spreadsheet (both MS Excel or LibreOffice Calc are good ones) and adjust the row height and column width to match. Then I insert the picture and I am setting as the background. After that I begin coloring the cells with the picture in the background as a reference. Once I am done, I delete the original picture and then I print the pattern I just created.
