Right, it’s just another way to serve cauliflower, not meant to be like mashed potatoes.

I have tried mashed cauliflower and I don’t care for it.
I REALLY like cutting up cauliflower, putting it on a sheet pan, coating it with a drizzle of olive oil, salt and cumin (or curry or chili powder or any spice) and roasting it in a 400* oven for about 20 minutes. I can eat the whole head myself like that.
OR I once had it in a restaurant, a tapas place, pureed over scallops. I don’t remember what else was in the puree for flavoring but most likely saffron and a bit of cream. Delish!

CAULIFLOWER UPDATE!!
Well, I’ll be dipped, I actually liked the ‘fake’ mashed potatoes. (I’m tired of typing the word cauliflower over and over so I renamed them fake potates ). DH seasoned them just right and they actaully tasted okay. In fact, I’d eat them again. That’s saying a lot for me. :teehee:
