Hello again! First of all, I’m so glad I found this site! You’ve all been [B]extremely [/B] helpful!
So the pattern I’m working on has you bind off with a crochet hook. You end with 3 sts and then use the crochet hook to pull the yarn through the sts in this order (1-3 being left to right): 2, 3, 1.
I know there a several videos on binding off with crochet hooks so I guess my question is: which one should I use?

today, many crochet hooks have mm sizing use 1 size larger than your knitting needle size. (so if you knit with a size 7, (4.5mm) use a size 8 (H) hook
if you have a bunch of crochet hooks and they don’t have mm sizing,
use a needle gauge to find a hook one size bigger than your needles.
Binding off (regular or fancy (crochet 3together, chain 3( or more) crochet 3 tog, chain…) with a crochet hook is one way to get a very even edge to a bind off!
If you knit/crochet loosely, you might not need to go up 1 size, but many crochet a bit tighter than they knit… so try the larger size first…
How lucky! Our one crochet hook is big enough!
I knit kind of tight (still trying to find the line between too tight and too lose…) so I’ll need the extra size…
So now that I’ve got that cleared up, could someone possibly explain how I bind off in the 2, 3, 1 order? I thought I understood it but don’t (thankfully I found this out practicing and not by jumping right in to the project …).

stick the crochet hook into stitch 2 and 1 (as if to knit.)
turn the stitches (and the hook!) and then stick it into the back loop of stitch 3
wrap yarn round hook and pull a stitch through. (stitches 1 and 3 will be 'sitting under stitch 2 (which will be RAISED and in center postition…
