Which cast on method should I use?

but I am adding a hole so that it can be used in the car seat. I found another recipe that says to cast off 10 stitches in the middle when the piece measures a certain length, and then cast on 10 new stitches in the next row.

I am still new to knitting, and I dont know which cast on method to use.

when you CO in the middle of your work like that, the knit or cable CO is good to use. See them on the Cast ons page.
