What happens to the tail? at the start and at the end?

Thanks for taking the time to look at my post. I am new here (but not new at all)

My mom taught me to knit when I was a kid (many moons ago). I’ve recently picked up the knitting needles since moving to a cold climate.

One thing i have never understood - what do you do with the ends of the yarn?

I watched the video for Long-Tail Cast-On, but I do not understand what happens when you get to the end of the tail? Same with when you cast off? Where does it go?

What am I missing? Do I tie a knot? Or does it get hidden somehow?

Everything I have ever knitted or crocheted has a very noticeable end and beginning.

Help?

You use a tapestry needle to weave the tail into the stitches.

Is there a possibility of it unraveling?
