OK, my scarf is the correct length and I know how to cast/bind off, but what do I do with the “tail” at the end?? And the “tail” at the beginning from when I cast on?? And the two “tails” in the middle from when I joined another ball of yarn??

As for “tails”…please don’t just cut them off at the knot.
Weave in your tails! Here are a couple of YOUTUBE videos:
Cut the yarn leaving about 6" tail, and either thread it through the last loop, or pull out the last loop. Then thread the end through several nearby sts and trim it off.
