a toe-up sock is one that starts at the toe, and knits up to the cuff. The alternative is a top-down, or cuff-down sock. It just depends on where the knitting begins and in what direction it goes.
A benefit of toe-up is that you can knit the cuff as long as you want without worrying about running out of yarn.
And toe-up means you don’t have to sew the toe closed. And the toe starts narrow so you can just keep widening it until it fits the foot. With cuff-down you have to cast on the correct number of stitches to fit around.
But cuff-down it’s easier to do a heel flap (some people think it wears better).
