Threading yarn through rem sts and binding off

I’m making a bear and each piece is made separately and then sewn together. I finished the head and at the end it says “thread yarn through rem sts.” it says that for all the pieces actually. Can I just bind off instead? Is there really a difference?

Threading the yarn through the remaining stitches will create a circle of stitches, like at the top of a hat. Maybe you need this for a teddy bear.

Binding off the last stitches would leave an opening, threading the yarn through them won’t.

Does your pattern have any specifics for finishing the teddy bear? Any directions other than sew the pieces together?
