Seaming up a hat

I normally knit hats on round needles, but used straights for this pattern. Which seaming method looks best for hats?

I like the mattress stitch for seaming (especially if it is all one color); however, it does take a little bit of patience to work.

Thanks. I think I’ll try to use it. With the hat being curved, I didn’t know if it could be used.
