I just finished my first scarf. It was just a simple knit one, purl one deal.
I am wondering why the whole scarf rolls in on itself. Have I made my stitches too tight? Is there anyway to fix this? what should i do in the future?

Stockinette stitch will curl - it’s the nature of the beast. Most patterns will include some sort of border around a scarf knit in St St to keep it from curling - a few stitches of garter or seed stitch are often used.
You could try to crochet a few rows around it.
