There are several ways to do this but s common method is to decrease every other row or every other round for most of the shaping. You could decrease every 10 stitches 8 times or every 10sts 8 times on the first decrease round, then knit a round with no decreases. For each dec round knit one fewer stitch between decreases until you like the shape and have almost closed the crown, then k2tog all around and finally cut and thread the yarn through all the sts and pull up tightly.
I usually cast on 80 for hats. For the decrease i do this-
Knit 8, k2tog, pm around
Knit 1 row even
Knit to 2 stitches before marker, k2tog, sm, around
Knit 1 row even
Continue this way till you’re down to about 2 stitches between markers then k2tog across removing markers. Do this again if necessary then cut yarn to about 10 inches and thread through yarn needle and slip through stitches and remove needles. Cinch the top and thread through again then weave in ends.
