Picking up stitches in middle of work?

Is it possible to pick up stitches and start knitting from the middle of a piece? I want to add a fin to the top of a hat knit in stockinette. I plan on knitting the hat flat, then seaming up the back. The fin will go right on top.

Will this work? Will it make the fin stand straight up? (It only needs to be about an inch, inch and a half tall).

I don’t see why not, but I’m not sure it will stand up w/o some sort of support.

What would be the best way to do it? I just looked over the video of it again on this site, and it recommends going through 2 strands. Should I go over both sides of 1 knit? (the entire V?) Will that be enough “support”?

(i hope that made sense…)

Perhaps I could knit the fin with 2 strands of yarn to make it stiffer so it would stand up…

I would think two strands would be best, but I haven’t ever done this so I’m not sure how to best make it stand up. All I can think is to maybe make it double and put something between the layers? Like that cross stitch plastic?
