Not knitting - bread making in a machine

If you make no-knead with all purpose white flour, the improver (probably some sort of malt/dextrose) makes very little difference. However with heavier grains & even very strong white bread flour, it makes a world of difference. Thanks. Wow, this has made me realise we’ve had the bread machine almost a year and a half now. Time flies!

Our machine is a great success, I’m so glad I bought it. We make usually just one loaf each week and possibly two in the school holidays. We have had lovely dark and multigrain flours and some UK grist too. We actually still have not used the maker for anything other than a regular loaf. It has all sorts of functions for other doughs, pizza, brioche etc and also yoghurt, and cottage cheese. I know one day we will get to making some of those things. The best thing is my little Mister is already convinced to make bread for ever, it takes him 2 or 3 minutes to load the machine, he doesn’t mind doing it in the slightest. I do feel that the ease, lovely bread, knowing it is wholesome ingredients (not ultra processed supermarket bread) and starting at this age, has set him up in a great habit.

As a newbie I never would have seen this thread had it not been revived by Auriane, and am so glad I did. How is your health now, @Creations? Sounds like you’ve been through an ordeal, or several… So sorry.

Ah, thats really kind of you to ask. I am certainly not 100% but I am in far less pain and I can do a little more as the months go by. One of the biggest things for me is being able to attend my son’s orthodontic appointments, I’m a mess afterwards and can’t move for the rest of the day (and not much the next day) but it means a great deal to both me and my little mister that i can be there with him, a mum’s presence and a hand to hold can give some pain relief whilst braces are being tightened! He has it removed in a few months and we’ll be able to add seeds and chopped nuts to our bread which will be very exciting.

Getting braces tightened is painful, poor guy. He’ll be overjoyed when they come off – and delighted at all the things he can eat again! As will you, no doubt. I remember (so very long ago) how much I missed corn on the cob and biting into a crisp apple.

Glad you are in less pain, despite ongoing limitations. We do what we must, but this sounds like a lot of challenge over a long period of time. Very best to you.
