I would like to make a mosiac afghan, my question is how to finish off the back? …with all those carry along yarns on the back, it just wouldn’t look nice or it would catch on something. Is there a technique to finish off a project? Even for a Fair Isle sweater…hands or jewelry can get caught & pull…is there something that can be done?

Maybe you could get a piece of fabric to fit it, and then sew it onto the back? Maybe something like fleece. Or you could knit a back onto it.
Just my $0.02.
If you did it in a wool that could then be felted (either lightly or fully), all those carried yarns on the back would then make a wonderfully thick, fluffy, warm blankie! They’d all blend together. You would have to make it bigger at the outset though, but you could use large-ish needles too.
