Minimum stitches for Kitchener

Is there a minimum number of stitches in a sock toe for which you can use the Kitchener stitch? My pattern says to decrease until there are 8 stitches, then cut the yarn and pull tightlhy (like a drawstring bag) I want to use KS instead.

As long as you’ve got an even number of stitches, so 8…4 on each needle, you can do Kitchener.
