Hey! So i am knitting socks at the moment. The pattern says “knit to 1 inch”. Does this 1 inch include the stitches on my needle?

As said, yes. But in the grand scheme of things 1 row isn’t that much to fret about unless you’re using really bulky yarn.
You’re working with a pattern that is guessing based on averages and yarn has a lot of give. If you’re using fingering ~1/10 an inch isn’t going to be noticed.
Agree with Mike here. Unless it’s bulky yarn that little bit isn’t a big deal. That said I do count to the edge of the needle including stitches on the needle.
