In the log cabin examples it says to bind off but leave last stitch on. So does that mean I just leave it on the needle and then pick up stitches adding onto where I left the other one on?

Yes. Usually you’re turning a corner (the one remaining st acts like a pivot pt) and you’ll pick up sts… thereby adding to the one already on your ndl.
