You generally don’t. They can be crocheted together, but most people use the mattress stitch just like sewing pieces of a sweater together.

The best technique I found, when I wanted a knit afghan of different colored or patterned squares, was to knit strips of squares, changing the color as I went along, then sew the strips together.

OR: you can use the intarsia method, knit on long round needle, and do the same idea, changing colors as the squares go along. KWIM?
