Knitting letters into a scarf

Hello all, I am new to this site and I have a question for you. I just started knitting a scarf and I am trying to incorporate letters in different colors into the pattern. I am having a hard time with all the yarn joining when I use 2 knitting needles. Should I try using 3 needles or is there another way to do that? If you need more info as to what I’m trying to do let me know.

When you add a motif to knitting, you need to use Intarsia knitting, where you have a strand for each color–one for the right of the letter, one (or more) for the letter, one to the left of the letter.

Or you could knit the scarf all in the main color and then do the letter in duplicate stitch.
