Sounds like the sock may have a purl side and a knit side. The increase should happen on the purl side of the sock and here’s a video that may help show your grandmother how to. Good luck with it!
Do you know if the socks are knitted flat on two needles where there would be a knit side and a purl side, or in the round? Just a thought, maybe she is doing the heel flap, which does have a knit side and a purl side.
