It’s not necessary to knit the edges of everything. Some patterns call for it, others don’t. In the end, it’s up to you, really.

For me, it depends on where the edge is going to end up.
if the edge is going to be part of a seam, then I’ll knit it because it makes it easier to distinguish the individual rows.
if the edge is going to show, like a scarf edge, then I slip the first stitch of each row, and then knit the rest as the pattern calls.
Slipping the edge stitch also prevents, at least somewhat, stockinette edges from curling.
