I can’t figure out what exactly I’m doing that causes my last stitch of a row to be so LARGE…makes the edge of my knitting look like, well, you know, not so good…any ideas?

Also, off the top of my head, what should help is to just make sure you give a really good tug on the first stitch of each row, which in theory should tighten up the last stitch on the previous row.
That stitch often is a little larger, but usually blends in fine once you’ve done several rows.
As a new knitter your tension is going to be off some so don’t worry about it. Keep knitting even if it looks wonky. After you’ve done a few feet you’ll be amazed at how your tension starts to even out as you develop a rhythm for knitting.
If you feel after knitting a bit that it’s excessively large post a pic if you can.
Also, slipping the 1st stitch helps.
