Intarsia Cow?

So I found this awesome pattern on ravelry.com for a cow plushy

But I want to make it white with black spots. I don’t know what the best way is to go about planning the intarsia. The pattern calls for a lot of short row shaping and is knit flat then seamed together. The short rows are just messing with me. suggestions?

I can see the short rows in the head. I would plan the color changes so they don’t coincide with a short row turn and knit away. The short rows in the body don’t show in the picture but the same would go for them. It looks like great fun to knit and I love the idea of more than one color.
