I have lots and lots of miscellaneous balls of wool, left over from past crocheting projects and inherited from Grandparents too…
Is there anyway of deciphering what kind of wool it is? I mean, like as Double Knit, 3 ply, etc?
Is it too simple to expect that 2, 3, or 4 ply be just made up of 2, 3, or 4 single strandsof wool?
So how’s double knit made up?

Plies just tell how many strands are in the yarn–you can have very thin yarns with lots of plies and thick yarn with two.
Wraps per inch tells more about the thickness. Here is something about that.
Don’t mean to make things even more confusing, but I noticed that you are in the UK – the US and UK terms for yarn weights are different. In the UK, terms like 2-ply and 4-ply refer to a certain gauge of yarn, regardless of how many plies the yarn has. That makes no sense, but neither do the terms we use. (There is probably some historical reason that is no longer valid.) Anyway, here’s more info.
