I have to pick up some stitches on the hem of a sweater, then knit an i-cord edge. Is it better to spread out my stitches more or just pick up as I normally would? The pattern doesn’t indicate how many stitches to pick up, just to do it. I’m trying to figure out if the i-cord would stretch out the hem or not as I’ve never done one before. Thanks for the help!

Yes, the I-cord can stretch out the hem and make it flare, especially if the stitches are picked up too close together.
See if the third pdf on this page helps. The later steps consider how to space out the picked up sts.
You may also have to figure this out with your yarn and needle size, perhaps using a swatch for practice.
