It might be easiest to knit 2 strips the width you need and then sew them in with mattress stitch.

Or in the spirit of “if you can’t hide it, feature it”, you could pick up along one side seam, and knit the panel with a totally different, decorative stitch and then graft to the other seam.

There may be other ways, but that’s what I’d try. Depending on how much you need to add, it might make the armhole an odd shape, but it should work for up to 2" / side.

I’ve done just what ColoCro suggested to knit a tapered gusset into a jacket and it works very neatly.

Are you following a pattern and if so what is the name of the pattern and designer?

You can add width by knitting side panels and sewing them in. Pick up stitches along each side seam, knit panels to your desired width, and bind off. Use matching or contrasting yarn for style. Seam neatly using mattress stitch to blend the panels with the vest.
