How to Cast off in the center?

Sorry if this has been explained before - I can’t find it with a search.

I’m working on the back of a cardigan, using a pattern chart, and I have to bind off stitches in the center, and then work a few more rows on each side separately. I’m not quite sure how to do this - it might be a silly question, but if I cast off stitches in the center of a row, knit to the end, and then turn, I’ll have to work only one side (for the shoulder shaping) at a time, right? So I’ll have to finish one side, break off the yarn, and then join the yarn again to finish the second side?

Yep, you got it figured out. Some patterns have you work on one shoulder at a time, others say to do both at the same time with two balls of yarn. You do whatever feels easier for you.
