If the pattern calls for casting on 30 stitches on size 8 needles w/2 oz yarn but I am using 6 oz yarn would I increase the size of the needle.? And if so by how much? Also, by only casting on 30 stitches it seems like that’s not enough for a normal size head. I"m increasing 1 stitch at the beginning of each odd row and decreasing at the end of each even row…

Yarn thickness will make a big difference. There’s really no hard and fast rule.
As for the rest, is there anyway to post the pattern, or a picture?
Well first, it says to make it with worsted weight yarn–it will take 2 oz of each color.
What is the weight of the yarn you want to use? What does the label call it?
When this hat is knit, you’re first knitting the stripes, so the 30 stitches will go from the forehead to the crown. When you pick up the stitches for the cuff around the head, you’ll have 84 which sounds right.
:oops: the white I"m using is a chunky 3 oz…and the blue is 6 oz. and is worsted weight…does this help?
It won’t work if you use the two weights. Your white will be twice as big as your blue. I suppose you could double the blue–use two strands, but then you’d have to figure out how to modify the pattern for that thickness. If you knit it as is with the thick yarn, you’d end up with a mighty big hat.
I can’t say just to decrease the number of stitches by half, though that might work. I just haven’t modified patterns to that degree and wouldn’t want to steer you wrong. Your best bet is to either get some worsted for the white, or play with it and see what you come up with.
