but I’m allergic to wool :-(. I’m wondering about Knitpicks Shine or Shine Sport (cotton/modul blend) I’m terrible at figuring yarn substitutions…any pointers? What is the most important figure to match (i.e. weight, yardage, etc…)

I was planning on doing a sweater using EZ’s percentage system from some sale yarn at Knitpicks, but I’m not so sure about incorporating cables in my own design (yet!)

Weight, yardage and gauge are what you need to consider when substituting. If you get the same weight, and enough yards, gauge can be worked out with the needle sizes.
Weight does not refer to the weight of the skein, btw, but the thickness of the yarn. Just thought I’d add that. If you get a yarn that’s close to the same gauge, you could use it, and figure you’d need similar yardage. It looks like that calls for a light worsted. Caron Simply Soft might do.
