Hi, I’m making a blanket that is knitted in blocks of garter stitch. What is the best way to sew the blocks together so that the sewing stitches don’t show?

I don’t think any seam is completely invisible, but you might try mattress stitch. It seems to be the best at not standing out. (Video in link at top of page)
Alternatively you could crochet them together. Crochet a border around each one then crochet them together with same color and it will look great.
I don’t know that it will make a big difference, but I found a video using Mattress Stitch on Garter Stitch Seams; it may be helpful in that the video on this site demonstrates on stockinette stitch.
