Clam Laguini Recipe

1/4c butter
1/4 c parsley
3 garlic cloves
Put all ingredients in deep frying pan. Saute

Drain 1 can of clams (baby are best)
Add enough cream to thicken salt and pepper to taste.
Parm cheese to taste…

Pour over laguini noodles.

Take all of 10 minutes!

Quick Enchiladas:

-sour cream
-enchilada sauce (canned works fine)

  • cooked chicken or steak, onions, black olives, pepers (if desired)

Pre heat oven to 350. Dip tortilla in sauce. Put a dollop of sour cream in the middle, add cheese and whatever other additional toppings desired. Roll it up, place in casserole dish. Make as many as needed for family. Bake until cheese is bubbly. (Depending on how many you make, only time needed is time required for oven to preheat and then bake…)

Serve. 1 Enchilada serves 1 person.

These “keep” very well in the refrigerator, and make delicious left overs.


Quick Enchiladas

This is something we make quite often.

We buy the Tysons chicken that is already cooked. They have three different flavors. One is Southwestern. It’s easy and delicious!

My favorite weight watcher’s recipe:

Quarter small red potatoes and put in a roasting pan. Add carrots (I use the small carrots from the market already washed so I just dump them in), chicken cut up into parts, garlic cloves (enough for 5 cloves per piece of chicken. They now have whole tubs of peeled cloves in the market. I just dump the whole tub in. Roasted garlic is not smelly, it tastes sweet) and sprigs of fresh rosemary. Add about 4 tsps of olive oil and toss.Roast at 425 for about 50 minutes to an hour, tossing every once in a while. If you use the shortcuts I use, prep time is about 10 min.

one of my favorites; requires little effort, and it helps clean out your veggie bin!

you can use whatever veggies you want, but our typical ‘veggie bake’ includes:

1 sweet potato, peeled and cubed
1 russet potato, cubed
1/2 onion, diced
5 cloves garlic, minced
a dozen brussel sprouts, trimmed and halved
1 carrot, sliced
1 zucchini, sliced
spinach, mustard greens and/or kale (layered on bottom)

1 cup veg or chix broth
5 pats of salted or pesto butter
salt, pepper, dash of cayenne

baguette or pita slices

throw everything into a rectangular pyrex… bake at 400 for 45 minutes

This is what I cook when I don’t have much time or I just don’t feel like cooking dinner!

Beef & Noodles

1 Package Hormel Ready to Eat Beef Roast
Egg Noodles
1 Can of Mixed Veggies (Veg-All)
1 Jar of Beef Gravy

Cook the noodles and drain. Heat the beef roast (4 mins in microwave), and shred with a fork (keep the juices). Pour beef & juices into the noodles, add mixed veggies and gravy. Heat through, and serve.

Takes no more than 15 minutes from start to finish, and the kids and man love it! :cheering:

Here’s another:

Chicken Spaghetti

1 package of spaghetti (or any pasta)
1 lb of skinless, boneless chicken breasts, cubed
1 bag frozen “seasoning blend” veggies (onions, bell peppers & parsley)
Chicken bouillon for flavor (I like “Better Than Bouillon” Chicken Base)
1 jar chicken gravy

Cook the pasta, drain
Season and brown the chicken
Add seasoning veggies and gravy
Add bouillion to taste
Mix with pasta and serve

Takes a little longer than the beef & pasta, but still a quick, easy meal.

This is an Easy Weight Watcher Recipe too~
1 tub cool whip
1 small (1oz) Sugar Free Fat Free Instant Pudding… Pistachio Flavor
1 small can crushed pineapple
1 small carton sf pina colada yogurt
Just add all the ingredients together and stir
Chill for 1 hour and serve
It is 1point a cup (for WW officianodos) and it is delicious~
It tastes like a tropical dessert

Lazy Baked Ravioli

-1 bag frozen ravioli
-1 jar spaghetti sauce

Preheat oven to 350. Boil ravioli until soft. Pour into casserole dish. Cover with sauce, top with cheese. Bake until cheese is melted.

Takes about 20 minutes (including baking time).


One for the veggies:

Wholemeal Pasta
1 can of tomatoes
1 onion
handful mushrooms
small handful capers
2 strips (per person) Quorn Bacon (optional) (cut the strips with scissors to smaller chunks)

Salad Veg, Olives and Feta (optional) for the salad

Boil the pasta.
Lightly fry the onions and mushrooms together with the Quorn Bacon.
Throw the tomatoes and capers at it and heat for a couple minutes.
Throw all of this at the pasta and stir together.
Serve with your fave salad veg, olives and feta.

Yum Yum.

Total time = length of time it takes to boil pasta.
