I am making tuque with ear covers and I am getting really bad curling on the edge of the tuque. What can I do to stop this effect?

Are you knitting it in stockinette stitch? Stockinette does curl, that’s just it’s nature. Doing a few rows of garter stitch or ribbed edge will prevent that from happening.
Or you may have to do a crochet slip stitch around the edges.
