Coconut milk?

Anyone else doing low carb and drinking coconut milk? I just figured out the yummiest way to drink unsweetened coconut milk! It’s a coconutty, chocolate flavor! It’s about 4 net and 8 total carbs.*

8 oz unsweetened coconut milk (in a carton in the refrigerated section)
2 T of unsweetened cocoa powder
1-2 packets of Splenda to taste

Mix with frother

You can stir it with a spoon, but it’s harder to mix.

We’ve been using coconut milk for a while. I use it in most of the baking I do and for cereal. I like it a lot. Your idea sounds good. I usually use stevia as my sweetener, so I might try that. I want to make “ice cream” with coconut milk, but haven’t gotten to that yet.

I don’t like stevia so I stick to splenda, but any sweetener would be work. I tried drinking it plain and it was okay, but I wouldn’t really drink it that way.

I don’t eat cereal, or any grains really, other than the occasional treat of a bowl of oatmeal which I don’t put any sort of milk in.

Ice cream sounds good!

I get the kind of coconut milk in a carton that’s found with the soy, rice and almond milks. I don’t like soy and have been using rice and sometimes almond, but like the coconut better, it’s a little creamier. You can get it plain or vanilla and has half as much sugar as the rice milk.

Good to know, Sue! I got mine at Sprouts, but maybe the grocery has it there, too. They didn’t have the refrigerated type.

There are refrigerated ones, too, I get it from the shelf. So Delicious is the brand name, it’s about $2 a quart. They also have frozen ‘ice cream’ and yogurt and even a coffee creamer.

I like the So Delicious the best. I tried the Silk brand and it tasted extremely like coconut. I ended up making a coconut cream pie with it and that was great. For everyday use it was too much flavor. I have found the So brand at natural grocery stores and the silk brand at Wal Mart and Smiths.

I got some of the unsweetened creamer (So Delicious) and it’s not sweet enough for me. I’ll try the vanilla one, too. I’ll also have to try the coconut milk…I bought the Sprouts brand. Sometimes brands do taste different as I found out when I was drinking soy milk.

My store (that I usually shop in) didn’t seem to have coconut milk, but then they often don’t have what I’m looking for. We go there because DH does the cooking and he likes the store. :lol:

I saw online that So Delicious had the aseptic coconut milk. That’s what I thought you were talking about, Sue. Those don’t need to be refrigerated till open.

Yes, I get the ones in the box that are on the shelf and you refrigerate after you open them. They do have the chilled ones in the dairy case too, but cost more than the shelf stable package.

Ohhhh I see. If I like the So Delicious brand it would probably still save money over the Sprouts brand. I’ll have to try the local grocery. They have more than the one my DH likes. Thanks for the info!

I haven’t checked the chain stores for it, but if they have a natural foods section it would be there. I live in a college town and the local ‘chain’ (three stores) carries a lot of the same products you’d find in a health food store.

For a while I was finding $1 off coupons on Vitamin Cottage has had the refrigerated So for as little as 2.50 for a 1/2 gallon. Trader Joes has their own brand, but I haven’t tried it yet. I made “ice cream” tonight and it came out pretty good. I used regular sugar in it, since the rest of the family would be eating it. I would like to try some with stevia, but I think the sugar does give it a better texture. Coconut palm sugar would probably work. I should have tried that.

I was mistaken. The refrigerated cartons are half gallons, so actually more economical than the quarts on the shelf. However, it takes me 10 days to 2 weeks to use up the quart, so that works better for me.

You are right. It’s not cheaper, if you won’t be able to use it up. I do keep a couple of the aseptic ones around in case we run out.

Hubby is having lots of coconut milk (also pure coconut oil from GNC in his coffee) and finding it seems to be helping his blood pressure.

Yep, I’ve been putting 1 tablespoon each in my coffee as well.
