I dont have a size 7 circular needles that the pattern calls for, but I do have them in straight. Then it calls for the next size up in DPNS (hardy har har) or circular…I have them both in size 8. I just cant deal with DPNS…so can I just use my str8s then switch???

I suppose you could do that, but the pattern wouldn’t work out quite right because when knitting in the round you only knit on the outside or front, but when knitting flat you have to turn your work and knit across the back. This will affect the pattern texture. It really doesn’t makes sense to switch to DPNs either. If you are going to knit it flat then just continue with the decreases and seam.
The easiest thing to do if you really want that hat is to buy the circ needed, but w/o buying needles I think the best thing to do is to find a flat knit pattern and use that. Here are some patterns for straight needles. You can always add a textured stitch meant for flat knitting to these.
Do note the weight of yarn they are using in these hats before casting on. If you have a different yarn you may need to adjust your CO.
