Found what I thought was a good pattern book (Knitted Wild Animals by Sarah Keen) for stuffed animals - they look great. General knitting directions are fine, but little in the way of how to connect the parts (legs, arms, snout, ears, tail) to body. Truth is I had not done any sewing of knitted pieces before but expected a bit more info. Did extensive Google search and very little in terms of specifically sewing parts to a stuffed animal (saw safety joints , but not what I need). Any resources you could recommend? TIA

I haven’t done this but I have found, at times, that what you put into your Google search can effect the results.
Rather than sewing maybe put in joining stuffed toy parts.
This one seems quite comprehensive on joining legs to body although the join is rather flat and may not be what you want, there might still be some helpful info on the positioning and joining methods
This one shows head and legs of a more full 3 dimensional toy, again might not be exactly what you need but watching several different tutorials might give you enough of an idea to give it a go
This one is not a video but a photo tutorial, if you scroll down you will see some quite clear photos of where to place your needle for sewing the knitted parts. At times I prefer a still photo so I can really look at where to put the sewing needle.
